Some burgers catch your eye; others surprise you with the very first bite. Mötley Mole, our Top Chart for August, does both: it comes in a red bun that’s impossible to ignore and packs smoky, fresh, spiced, fruity and crunchy flavours into a single burger.

The idea behind this limited edition was simple: give Mexican inspiration the RocknHopz treatment while making the most of one of the ingredients that marks the end of summer in the Canary Islands—seasonal figs. The result is a fig mole burger for anyone after something different, with a proper beef patty still firmly centre stage.

Mötley Mole will be available throughout August at RocknHopz, inside La Tejita Street Market in southern Tenerife.

A Mexican-inspired Top Chart

Every month, our Top Chart lets us venture beyond the regular menu and build a new combination around an idea, an ingredient or a season. For August, Mexico was our starting point: guacamole, pico de gallo, mole and tortilla chips, reimagined in a burger with an identity all its own.

The name Mötley Mole riffs on Mötley Crüe and the sauce that defines the recipe. But the nod goes beyond the name. Just as a great song needs rhythm, contrast and layers, this burger is designed so that every ingredient has a specific role to play.

The red bun sets the stage. Beneath it, fresh guacamole and pico de gallo meet rich beef, smoky cheese, the depth of the fig mole and a crunchy finish that completely changes the texture of each bite.

What’s in Mötley Mole

The base is a 200-gram beef patty, cooked to your preferred doneness. It’s topped with melted scamorza affumicata, an Italian stretched-curd cheese whose smoky character complements the mole without overpowering it.

The full build includes:

  • Toasted red bun.
  • House-made guacamole.
  • Fresh, well-drained pico de gallo.
  • 200-gram beef patty.
  • Melted smoked scamorza.
  • Rustic mole made with seasonal figs.
  • A crumble of tortilla chips, peanuts and sesame seeds.
  • House-made fries on the side.

Turning figs into a savoury mole

The heart of Mötley Mole is its fig mole. We weren’t looking for a sweet jam or a runny sauce; we wanted a thick, intense, spoonable mole that would stay put on top of the cheese while retaining visible pieces of fruit.

Figs bring a natural sweetness that rounds out the mole’s deep, spiced notes. The scamorza adds smoke and creaminess, while the pico de gallo and guacamole keep everything fresh. The fruit never takes over the burger; it settles into a savoury balance, with each layer setting up the next.

It may be an unusual combination, but it makes sense from the very first bite. Sweet and savoury, warm and fresh, creamy and crunchy all sit side by side without the beef ever losing its starring role.

A crumble that brings the crunch

The final touch goes on just before we close the burger: a crumble made with corn tortilla chips, roasted peanuts and sesame seeds. Its job is simple but crucial. It brings a hit of crunch that contrasts with the mole and melted cheese while reinforcing the recipe’s toasted notes.

We crush the tortilla chips unevenly, leaving a mix of crumbs and small pieces rather than turning them into powder. Combined with the peanuts and sesame seeds, they add texture to every bite and stop the burger from feeling one-note.

A limited-edition burger in southern Tenerife
